The Moka Origins Kokoa Kamili 72% Dark Chocolate Bar is, in a word, scrumptious! Jeff and Ishan, business partners and the heart and soul behind Moka Origins, started their chocolate and coffee endeavor back in 2014, with a sustainable farming venture in Cameroon, West Africa. Their farm in Cameroon continues to flourish. Cacao trees are thriving under the shade of plantain, mango, avocado and citrus trees, and one day soon, Jeff and Ishan hope to incorporate more of the Cameroon crops into their products. At present, most of the cacao beans in Moka Origins chocolate is procured from other producing partners around the world. The beans for this bar, for example, come from Mbingu Village in Kilombero Valley, Tanzania. Kokoa Kamili is a well-renowned fermentation facility in Mbingu Village that purchases wet cacao beans at a premium price (actually, the highest price paid for cacao in all of Tanzania) from more than 4,000 smallholder farmers in the region. Kokoa Kamili does great work, not only with the art and science of fermentation, but with training farmers how to increase the quantity of cacao beans without sacrificing quality. They also distribute cacao seedlings to farmers as an investment in their future and the future of fine flavor cacao.
These fine flavor (and organic) beans that Moka Origins sources from Kokoa Kamili are Trinitario beans with a slight presence of Neo-Nacional. They are fermented for 6 days in 3-tier wooden boxes and sun-dried before they arrive at the Moka Origins workshop in Honesdale, PA.
