Castronovo Chocolate Salitral Peru
While in Lima, Peru. Denise Castronovo learned about an interesting mix of native criollo cacao from the northern desert region of Piura. Typically cacao thrives in the rainforest, but this cacao has flourished in the dry environment at the lowest point of the Andes where the Amazon and the desert coast meet. Denise felt called to craft these special beans into a bar for us to savor, knowing that a drier climate yields gorgeous, flavorful cacao with fewer tannins (chocolate that is very tannic tastes bitter and leaves your mouth feeling dry from the astringency).
The Barometer Chocolate team fell in love with this bar immediately and I knew we had to get it in stock ASAP! The chocolate is bright with a hint of luscious tropical fruit flavors in the greeting notes. As the flavor journey progresses, you’ll find rich chocolate with a delicate nuttiness and a light pop of spice. This bar is magnificent!
