Chuao beans are prized for their high quality and are considered one of the world's rarest and finest cacao beans. The Chuao region, in the northern coastal range of Venezuela, is hemmed in by mountains which reduces contact with people and insects from other areas. Only a limited amount of this variety of Chuao cacao beans are available each year. The beans for this bar are sourced from the renowned Franceschi Plantation in the lush green landscape of the Paria Peninsula.

Experts agree that the Chuao are choice beans not only because of their unique genetics but also because of the intense work of La Empresa Campesina of Chuao during the pre-harvest, harvest and post-harvest. This female-run company has exclusive rights to harvest the Chuao beans. Their excellent farming, fermenting and drying techniques have been passed on from generation to generation, and therefore, the exceptional quality of the Chuao cacao beans has remained consistent throughout the years.

La Empresa Campesina of Chuao and their partners have created a Traceability Certificate to ensure that only the Chuao beans harvested in the Chuao village wind up in chocolate bars that are marketed as Chuao origin. Only a few chocolate makers, including Rózsavölgyi Csokoládé and a few other Barometer Chocolate favorites, such as Chapon and Soma, are assigned an allotment of Chuao beans and an identifying serial number. Rózsavölgyi Csokoládé was begun in Budapest by husband and wife team Zsolt Szabad and Katalin Csiszar in 2004 . Before becoming chocolate makers, Zsolt was a mechanical engineer and Katalin was a graphic designer. A wide and diverse collection of skills enable them to produce their superbly crafted, gorgeous bars of chocolate. In Hungarian, the word rózsavölgyi means "rose valley" which conjures up an appealing image of lush beauty and fragrant scents. This is quite fitting because each of their aromatic, creamy and full-bodied bars is covered in award-winning, thick and luxurious wrapping paper, featuring traditional Hungarian motifs. It is probably the prettiest packaging in the world of fine craft chocolate. The square shaped bars are molded to resemble intricate antique fireplace tiles.

Zsolt and Katalin are artists who view fine flavor chocolate as their inspiring medium.
