This Chapon Venezuela Chuao 75% Dark Chocolate Bar has a creamy, feather down mouthfeel thanks to velvety cocoa butter, which delivers flavors of pure chocolate, toasted spiced hazelnuts, vanilla and dark fruit with a hint of fig becoming prominent in the finish. It’s utterly delicious and the favorite bar of many of my customers.
The cacao used is made exclusively from Chuao beans. Chuao is a small village located in the northern coastal range of Venezuela where cacao plantations have been thriving for over 400 years. Chuao beans are some of the most expensive in the world because of their high quality and limited availability. Scarcely 20 tons of cacao are available each year.
Experts agree that the Chuao are choice beans not only because of their unique genetics but also because of the intense work of La Empresa Campesina of Chuao during the pre-harvest, harvest and post-harvest. This female-run company has exclusive rights to harvest the Chuao beans. Their excellent farming, fermenting and drying techniques have been passed on from generation to generation, and therefore, the exceptional quality of the Chuao cacao beans has remained consistent throughout the years.
La Empresa Campesina of Chuao and their partners have created a Traceability Certificate to ensure that only the Chuao beans harvested in the Chuao village wind up in chocolate bars that are marketed as Chuao origin. Only a few chocolate makers, including Chapon, and a few other Barometer Chocolate favorites, such as Rózsavölgyi Csokoládé and Soma, are assigned an allotment of Chuao beans and an identifying serial number.
The Chapon Venezuela Chuao 75% Dark Chocolate Bar is made by multi-awarded pâttisier-chocolatier Patrice Chapon, who once supplied ice creams and sorbets to Buckingham Palace. It's no surprise that he was invited to make the Queen's frozen desserts . Patrice's ice cream is voluptuous and silky, infused with ambrosial vanilla and opulent cinnamon.
While in England, he became fascinated with the concept of making his own bean-to-bar chocolate courtesy of the alluring array of chocolates at Harrod's. Patrice now has five chocolate boutiques in France, three of which are in Paris, as well as his own chocolate mousse truck that traverses the streets of the City of Lights.
Chapon's packaging is replete with fanciful whimsy, but the chocolate nestled inside is serious (and seriously delicious)! Several times each year, Patrice's journeys take him all over the globe, from the lush forests of Brazil to the Millot or Sambirano plantations in Madagascar. He feels compelled to meet the inspiring cacao farmers, learn about the beans, and source the finest vanilla, pink berry peppers and other spices for his indulgent creations.
